Allow to cool. Slice diagonally into 1 ½ ” squares. Slice mushrooms, celery cabbage, celery and bamboo shoots into ½-inch slices and water chestnuts as thinly as possible (peen). Using a high flame, heat a well-greased frying pan and add salt. Add mushrooms, celery cabbage, water chestnuts, bamboo shoots, snow pea pods and celery. Stir-fry for ½ minute. Add water. Cover and cook for 2 minutes. Add chicken, cornstarch paste, monosodium glutamate, pepper and sugar. Stir and cook for ½ minutes STEAMED GROUND PORK WITH HAM. (FOR TUI JING GEE YOK BENG) 1 pound ground pork (gee yok) ¼ Smithfield ham (for tui) 2 water chestnuts 1 teaspoon cornstarch ½ teaspoon monosodium Glutamate ½ teaspoon salt ½ teaspoon sugar 4 tablespoons water Dash of pepper ½ teaspoon soy sauce 1 tablespoon oil. Mince ham and water chestnuts very finely. Mix all ingredients and place in dish. Cover and steam for 15 minutes (Ging). BOILED RICE. Measure ½ cup rice for each person. Wash rice by rinsing and rubbing between the palms of your hands until the rinsing water is clear. Drain. Add 1 ½ cups water for each cup of rice. Boil about five minutes until most of the visible water has been boiled off and you can see air holes on top of the rice. Cover and simmer for 20 minutes. I hope that cleared up your dinner plans!
