Pork belly is a wonderful cut of pork: it is my favourite and we probably have it once a week. As you say, a little goes a long way though and it's easy to feel satiated with a bit. . .

I'm with Michele! Part of my loves making people love food they would otherwise avoid, but for now I'm happy for pork belly to stay inexpensive and undiscovered. However, I think the cat's out of the bag for anyone who tried this recipe — it's so simple but looks delicious!

you're so right about pork belly being misunderstood here. it's so bizarre! go to the UK (or any other country it seems) and it's all over all the menus - and they sell it for a heafty price for such a cheap cut!! I love when it gets crunchy though... this dish looks great.

Pork belly is my favorite cut of pork. I just love this post - full of great food, and passion for properly, humainly raised food. Strikes a great note with me.

And to all those that shun away from pork fat.. It is the new health food :D If you get pork from a naturally raised pig, life is good, really really good.

Yes pork belly is awesome. What's it with all these health-conscious types (<i>my</i> boyfriend included) pooh-pooh-ing the awesomeness of pork fat? Pish.

I'm so glad that there are people like me. Loving pork belly that is. My recipe is the "Red Cooked" version, which creates a more colorful dish. But in China we do have a pork belly soup using light soy sauce and star anise that results in a dish with lighter color but served with the broth.

And yes we should keep this delicacy to ourselves lest the cost should go up. shssssh!
